Apple Pie
Now that I am not able to eat Sugary foods with my Diabetes,i have just recently taken on some new Cooking trials!
One of these has been so successful and I am happy it turned out so good!
Yes the old humble Apple Pie is what this is about,its fast easy and really tasty too!
Good for me too I gather!
I just use a round non stick baking dish,smear it with Light Marg just in case!
Peel about 8 Granny Smith Apples,mix two tablespoons of Sweetener (like Sugarless) one tablespoon of Cinnamon .
Core the Apples and cut into strips,put in Bowl,add the Sweetener and Cinnamon and mix well!
Line the Baking dish with Puff Pastry,add the mixture and top with a few blobs of unsalted Butter!
Put another layer of Puff Pastry on top and seal! Make a few cuts in top pastry to stop any overflow!
Into a ready heated Oven at 180degrees for 35 Minutes.
All done and yummy!
Serve with a bit of light cream! Mouth watering!
As an addition I have also added Blueberries ,or Blackberries!

Sounds great Vernon, but does Granny know what you do with her apples?
Back in UK we used Bramley apples, real good cookers, but they are not available over here.

Sounds good Vernon.
However, I don't recommend puff pastry.
Not an expert on diabetes, but I do know that puff pasty is loaded with fat.
Better check that one out mate.
If in doubt, go to a low shortening pasty.
Bit tougher, but more healthy.
Don't want to lose you, do we!!

Thanks for that info,and yes I did know about the Fat content however I am able to get light Puff Pastry which is not too high in fat,but having said that fat is not too important to my Diabetes at this time ,as I am not at al overweight,in fact 7kg lower than I should be ,but a healthy weight never the less!
I will also look at that other pastry you talk of Den!

PS Just to add Den,its not so much the Fat content rather the Carb content I have to watch,as the Carbs create Energy thus Sugar! But all kept in tact with the Metformin Tabs!

Filo pastry will also do the job, is light and makes a difference to the taste.

Funny enough John
The first one I made I used Filo pastry,it was ok but we found that it tended to be a bit harf to slice after baking!
That type of pastry is better suited to making things like Samoosas ! Yummy!

Often puff pastry is hard to slice after baking.
Tends to soak up the moisture.
I only like to use it for things like sausage rolls,[pigs in a blanket] where very little moisture is used.

Know what you mean Den, reminds me of a 'lady' in Durban she was a bit of a pig in the blanket but she sure did like the moisture, mainly brandy.
