Now had you been a country boy you may well have done.
I shot mine on a pig farm my dad was a partner in, mum thought I was stupid.
But then I discovered that runs in the family like a wooden leg.
I wonder if Mary with the wooden leg had married a Woodentop if life would have been any easier for her. JS
A lean meat that is free-range and has no food miles – should we all be eating grey squirrel?
The meat of grey squirrel is similar to rabbit – lean and gamey. The animal’s diet of acorns also gives it a lovely nuttiness (perhaps unsurprisingly)! Chef Paul Wedgwood of Edinburgh’s Wedgwood restaurant has cooked with squirrel for many years.
Squirrel tastes like a subtler version of rabbit, with some saying the flavour resembles a cross between rabbit and chicken – with a hint of nuts. The meat is sweet, light in colour and finely textured.
Recipe
Buttermilk, 2 Cups All-Purpose Flour, 2 table spoons of Salt, 2 table spoons of Black pepper, 1 table spoon of Cajun seasoning, 2 cups of milk(for gravy)
Oh nearly forgot 3 or 4 quartered Squirrels, Grey ones obviously as Reds are protected.
Think it would be wise to cut back on the salt a bit, but if someone offered me that on a plate , doubt I would turn my noise up at it.
Apparently it was very popular in the UK same as Rabbit was many years ago.
Rabbit is still popular in France (Lapin) had it many times, makes a nice casserole.
