    Default Official {SCOUSE} Day Today.

For a good nose bag 4, 4, people. Every scouse house has its own ideas on the perfect pan of Scouse, Some like it like soup some like to be able to stand the spoon up in the middle of it, That's my idea of a good pan of scouse,
1 Kilo of the finest stewing beef you can get.
    1/2 Kilo of Kidneys
Chop both up and throw all excess fat away.
Boil yourself a pan of water don't worry if its a bit excessive.
Place the steak and Kidney into the boiling water.
Bring to the boil and scrape away the crap off the top.
Lower it down and let the fat left on the meat boil away.
Add a few stock cubes and then start chopping up your veg.
Onions, Carrots, Swede, Turnip, celery, anything you can put your hands on.
Mix in after your final skim of fat of the top, Barley, Split peas, Lentils, And any other broth mix you have.
Bring it all to the boil and add small peeled chopped potatoes, Or cubes.
    Taste for your personal taste.
Keep stirring all day until that texture you want is right, When your Brown Mouse is ready sit your self down and take what you can manage to eat not forgetting this has been simmering on a very low light for about 6 to 8 hours You know its a good scouse when a mate 3 streets away passes and says something smells good in the galley, And allow for whatever takes your fancy mine Red Cabbage, Or Beetroot, Or whatever floats your boat along with a wedge of very crusty well baked bread. It kept this part of the world going at one time never done anyone any harm full of everything the body needs to function. In the war years and beyond Blind scouse was popular meat rationed still made for a good feed. My old Mam used to bake a rhubarb crumble along with custard. Enjoy Lads Terry.

    Hi Terry
It sure looks good and will certainly fill your belly.
A couple of pints (or more) beforehand. Perfection.

Nice one Terry. Was brought up on the stuff and never did me any harm. Another great meal is Lancashire Hot Pot.

    Ode to Scouse

WE BECAME European Capital of Culture in two thousand and eight So let's celebrate ten years by stepping up to the plate And what's on the plate? I'll give you a clue, While Scousers the world over tuck into our stew They're scoffing Scouse in Sydney while surfing on Bondi Beach In Reykjavik they like it thick, lots of vodka within reach There's tartan Scouse in Inverness wi' whisky, neeps and tatties In Mumbai they add curry paste and make sarnies with chapatis A million clicking chopsticks mix Scouse with rice in China Japanese guzzling sushi-Scouse agree there's nothing finer In the Middle East they love to feast on Scouse (they like it blind) With peaches, dates and aubergines, and lemons (including rind) Spanish mums add saffron to make it nice and yeller 'Ole' they shout when they bring it out ... 'Come and get yer Scouse paella!' The best Italian restaurants serve Scousefilled ravioli In Rome, His Holiness has blessed our dish and made it holy In every greasy spoon, every gastronomic venue Today's a day to celebrate, for Scouse is on the menu So write your verses, send them in, 'cos we're all on a mission To fly the flag for poetry, in this brand new competition.

    Hello Terry
Never made Scouse with beef - always left -over roast lamb or best end of neck. It's all yummy !

Yes we too have scouse with lamb chunks and lamb mince, carrots, baby sweet corns, onions, leeks, celery, baked beans and of course potatoes. Sometimes we add those little lamb chops instead of the lamb chunks. Nice thick gravy - wow - just talking about it makes me hungry - oh and don't forget the odd pickled onion too as an extra condiment.

do similar but use a slow cooker and leave overnight to wake up to the aroma of what is coming for lunch and dinner. Can do enough to be able to freeze some for a later time for sure. Found that the best taste is done when using real cheap cuts of meat they do taste a lot better than the expensive ones when cooked slow.
That's the way the mop flops.

My thanks to Brian for this site.
