    Default Lovely yellow

    We all eat fruit and vegetables at some times and often with the skin on.

    Apples, Pears, Plums, Gooseberries, and many others.
    Vegetables such as Zucini, Courgettes to many, Egg Plant and others.

    But very often the most nutrition is just under the skin yet we remove most of that when we peel them

    Kiwi fruits I have found have most of their goodness in the skins and for that reason I have one, skin on, diced daily in my cereal.
    One contains as much vitamin C as four oranges and it also has traces of Omega 3.

    But there is another skin which most would never consider eating, the skin of the Banana.

    I recently found out that the skin contain so any minerals and vitamins good for your health yet we throw it out. It also has one of the highest levels of fibre so essential for good health.

    It can be blended to make a smoothie, cut up and added to stir fries giving it a nutty flavor.

    The other night I was frying some battered fish at home for dinner when I decided to batter some of these skins and deep fry them.
    The taste was more Banana than the actual fruit.

    So for something different but good for you try some this way.

    Hello John in Oz.

    This subject has just made me remember, We had a Storekeeper on the Royston Grange, A broad Liverpudlian accent but of Jamaican decent.
    He was a great bloke to work for. He told us that you should boil the skin of a green banana in a very small amount of water. Throw the skin away, drink the water.
    and his words were "You can go all night". I never did work out where he was going.
