    Default American Cheese Pie

    Hi Folks,
    A Happy New Year to all, let's hope for a more uplifting year this time......yeah...right. Any road up, I wonder if any one can help with a bit of advice.
    Over the Christmas period I was treated to a friend's home-made Cheese and Onion pie and though I wouldn't tell him, it was full of large bits of onion and very little cheese. I don't think I've had a tasty C & O pie since I left the Cotopaxi in '62.
    We used to get American Cheese Pie on the menu and it was delicious. It was an open pie like a flan and resembled an egg custard. I would say it was 80 percent cheese and the onions were chopped up small and were crispy and juicy as though they had been put in at the last minute. ( 'scuse me, I'm dribbling here ) There were also just a few garden peas in there which popped when you bit. Hells Bells. Nowthen, does any one know of that pie and the detail of how it was cooked, I know it's only a simple dish to me but one of you catering lads might know of it's recipe or a secret ingredient ?.

    Default A basic Cheese Pie recipe

    A basic Cheese Pie recipe

    Ingredients & Quantities

    Pastry:

    8oz of Plain Flour
    2oz of Butter
    2oz of Lard

    Filling:

    1 small Onion
    2 Eggs
    1/2 pint of Milk
    1/2lb of Cheese (Cheddar)

    Method

    Mix the flour, margarine and lard together to form a dough - add a little water to improve consistency.

    Roll this pastry out in to a flan dish and blind bake for about 10 minutes.

    Add the chopped up onion and grated cheese to the pastry base, covering it all.

    Beat the eggs in to the milk, often a touch of flour is added here, season to taste and then add this all to the flan dish.

    Bake in oven at 300F/160C for approx. 30 minutes.

    Notes: a mature cheddar adds extra flavour to this dish.

    I would imagine that adding an American Cheese would give you something similar to what you seek.

    A handful of peas and a little chopped parsley, possibly added to give some colour.

    A sprinkle of paprika, ensures a perfect browning.

    I remember having Cheese pie when stuck ov er several days in Texas , and thought the flavour different to the Cheese & egg flan that we have in the UK so I searched teh recipes and found a very typical one on Flora's Recipe Hideout

    American Cheese Pie

    Author/Submitted by:
    Servings: 1
    Categories: Desserts / Pies & Pastries

    Ingredients:

    1/3 cup butter
    1 cup less 2 tb sugar
    1 t all-purpose flour
    1 lg whole egg (a generous 1/2 cup )
    4 oz cheddar cheese, grated
    1/3 cup milk
    1 t vanilla
    1 unbaked 9" pie shell

    Directions:
    Cream together the butter, sugar and teaspoonful of flour. Add the eggs, beating well, then the cheese, milk and vanilla. Pour into an unbaked pie shell and bake in a preheated oven at 350~ for 40 to 50 minutes or until the custard is set.

    Wow that is a lot of sugar in a savoury pie , but I found several similar all with sugar m Scarey

    sounds very like a quiche to me as I never heard of an american cheese pie, after 46 years here

    Hi Kevin
    it sounds a bit like the cheese & onion pie we were served for supper every other sunday at the training ship "Indefatigable", circa ' 62/63, possibly other people on here will agree ?
    Some liked it others not so, but when you are a starving 14 to 16 year old ( any food will do )

    It is just about a quiche, but guess the amount of Cheese differs, rarely so much in a quiche. The American bit it would seem is just from the American Cheese used and possibly they refer to a quiche type dish as a pie ?

    Here we would generally expect a pastry crust on top of anything called a pie:

    Otherwise little Jack Horner would have seen his plums !

    Thanks to Neville,Tony,Keith and Rob for all your replies and for the great recipes from Keith and Rob.
    I am sorry I am late getting back on line having got back from a hurried visit to my son's in Bristol with a bit of a family problem.
    When I arrived home we had no power in the house due to an electrical fault which had tripped the rcd. Me and my mate, who is a great electrican, spent a day trying to find it ( in some old wiring in a bad to get at place) and decided to run a new supply and finished up rewiring two bedrooms.
    But compared to the Costa Concordia............
